Smoky chorizo, sweet mango, and creamy avocado will make these tacos an instant hit. Potatoes and chorizo are sauteed to perfection and topped with sweet-and-spicy avocado salsa. Perfect for livening up weeknight meals or entertaining guests, these tacos are bursting with flavor.
Ingredients:
1 lb red potatoes, cut into ½ in chunks
12 oz. chorizo sausage, crumbled
1 medium onion, finely chopped
2 cloves garlic, minced
1 tsp salt
For salsa:
- 1 small jalapeno chili, stemmed and minced
- 1 small red onion, chopped
- 1 tbsp fresh cilantro, chopped
- 1 large avocado, peeled, pitted, and diced
- 1 medium mango, peeled, seeded and diced
- 1 lime, juiced
- 12 six-inch corn tortillas, warmed
Directions:
Fill large saucepan with water and bring to a boil. Add potatoes and 1 tsp salt, cook, covered 10 to 12 minutes or until tender and easily pierced with a fork. Drain and set aside.
Heat a large, nonstick saucepan over medium heat. Add sausage and cook until it begins to brown. Add onion and minced garlic, and saute until onions are translucent and aromatic.
For salsa combine avocado and lime juice in small bowl and toss gently to combine. Add jalapeno, onion, cilantro, and mango. Toss gently to combine. Season with salt if desired.
Assemble tacos by filling warm corn tortilla with chorizo mixture. Top with salsa. Serve immediately.
